“I’m fascinated by materials curled by the effect of time, boasting the articulation of use and wear from life past. Its beauty is so rich. I recreate this look of aging afresh, in food, ironically, abusing my decorative sugar surfaces with a delicate hand, pushing the sugar’s potential for that richness beyond what I’ve previously known or seen, forging textures that play with light and shadow. Each cake shows me something new…” ~ Jasmine Rae

ABOUT THIS EXTRAORDINARY Workshop

“This course is about learning principles that may help YOU find YOU, your own voice, a voice you may want to share with the world in the robust form of a thriving business. This course isn’t about a formula, isn’t about tips and tricks, or how to be me. I’m extremely proud of what we have created for you, because it’s about using myself as an example of a journey. Although this workshop is rooted in practicality, technique, and lessons, it’s also beautiful – and most importantly, it’s about me sharing with you my perspective and principles, as well as my approach to myself as an artist. My hope is that you will do the same so you’ll end up with something uniquely YOU.” ~ Jasmine Rae

After getting settled you’ll join trip facilitator, Jessica, for a brief trip orientation followed by a workshop overview with Jasmine Rae.

Afterwards, take some time to explore the villa and grounds with your fellow students, then gather together for a friendly aperitivo followed by a delectable welcome dinner prepared by our own Chef Lorenza.

  • Instruction with Jasmine, landscape sketching, herb walk with Lorenza, bruschetta-making lesson with Paola

Afterwards, you’ll join Jasmine for your first full workshop session in the villa’s spacious studio.

Just before lunchtime, chef Lorenza will be taking you on an informative herb walk, where you’ll learn about classic Italian herbs and how they’re used in the kitchen. Be ready to take some notes! Lunch will be served up buffet-style – featuring herb-based dishes, of course.

In afternoon you’ll continue your class time with Jasmine, including a walk into the nearby vineyard for an inspiring landscape sketching lesson. Afterwards you’ll join Paola fireside for an oh-so-fun bruschetta-making lesson, featuring crusty, Tuscan bread and the estate’s delectable extra virgin olive oil. A delicious, regional-style dinner follows.

Day 3 – Wednesday, November 3: Pienza

  • Instruction with Jasmine, organic flour mill, Pienza
  • Breakfast, lunch and dinner

This morning, after breakfast, you’ll head back to the studio with Jasmine for another fantastic morning of learning and creating. Then get ready for an inspiring outing, as our drivers transport you to a castle, turned organic flour mill, in the spectacular Val d’Orcia of Tuscany – where they have preserved the centuries-old practice of stone grinding flour. After a fascinating tour, lunch will be served up at the mill’s cozy restaurant.

After lunch, it’s off to the nearby hill town of Pienza where you’ll enjoy some free time to shop (so many artisan shops!) and explore the winding alleyways that open to spectacular views over the valley below.

Afterwards, it’s back to the villa for a continued afternoon session with Jasmine, before gathering together for aperitivo, followed by another delectable dinner prepared by Lorenza.

Day 4 – Thursday, November 4: Città della Pieve, Chiusi

  • Instruction with Jasmine, visit to Città della Pieve, saffron tasting, pizza night

This morning, after a delicious breakfast in the villa’s dining hall, you’ll join Jasmine in the studio for a fabulous, full-morning session. Lunch today will be served up buffet-style, featuring some favorite Italian salads.

After lunch you’ll have a chance to relax a bit, or continue working on your project in the studio, before our drivers take you to nearby Città della Pieve – a beautifully preserved medieval village. Here you’ll enjoy a lovely walking tour, including a stop in the stunning cathedral and a jaunt down the narrowest alleyway in Italy! Last stop is our friend, Alessandro’s, shop for a private visit and very special saffron tasting – a specialty of Città della Pieve.

Afterwards, you’ll continue on to the ancient town of Chiusi to visit the exceptional Etruscan museum, featuring finds from local Etruscan tombs – amazing. Last stop is a local pizzeria for an up-close look at how Italian pizza is really made (in a blazing wood-fired oven), followed by a pizza dinner, of course!

  • Instruction with Jasmine, Italian cake-baking with Lorenza, celebratory aperitivo & dinner
  • Breakfast, lunch and dinner

This morning, after another delicious breakfast, you’ll join Jasmine for a full morning session, as you immerse yourself in another day of creativity and inspiration.

A buffet lunch will be served up at the villa, followed by an afternoon session with Jasmine that includes an Italian cake-baking session with Lorenza – delightful! In fact, together you’ll be making tonight’s dessert – an Italian classic called torta della nonna. Plus Lorenza will be sharing with you some of her other favorite torta recipes.

Afterwards, gather together with Jasmine and your fellow students for a special, celebratory aperitivo/dinner.

Day 6 – Saturday, November 6: Departure

This morning, early, our drivers will be transporting you to Rome Fiumicino Airport.

VENUE & ACCOMMODATIONS ~ Villa Poggio alle Trese

Poggio alle Trese has been a part of a family estate for four centuries – an estate that includes stunning olive groves, sweeping vineyards and a precious little lake tucked into the nearby forest. The villa itself sits upon the very border of Tuscany and Umbria, an area that was prone to invasions by the Duke of Tuscany (back when feudal battles were the norm), and was lovingly restored by the family 12 years ago. The renovation included updates and redos to the kitchens, bedrooms and bathrooms – all done with classy, traditional touches. The result is a stately structure that reflects its history with grace, while it beckons to modern-day guests who love sumptuous sleeping rooms with characteristic touches.
